Gorgeous Salad
ingredients
- 12 ounces yellow or sweet potato, peeled and cut into 1" chunks
- avocado oil spray
- 1/4 teaspoon salt
- 4 ounces baby spinach
- 2 ounces radicchio, chopped
- 16 orange cherry tomatoes (or any color), halved
- 1 large dark red heirloom tomato (or any color), cut into 8 wedges
- 1 small fennel bulb, sliced thin
- 1 small red onion, sliced thin
- 1 medium avocado, peeled and chopped
- 2 ounces microgreens
Instructions
- Preheat oven to 400
- In a large pan, add potatoes. Season with salt and spray with oil. Roast for 30-40 minutes flipping once.
- While the potatoes are roasting, make the rest of the salad and your dressing of choice. This is great with Lemon Vinaigrette (link), Apple Cider Vinaigrette (link), or Sherry Shallot Dressing (link).
- When the potatoes are ready, let them cool and add to other veggies. Toss with dressing of choice (nutrition info does not include dressing).
- Top with microgreens.
Notes
