Balsamic Bell Peppers
ingredients
- 1 pound mini, multicolored bell peppers, cored and halved
- 1/4 cup balsamic vinegar
- 2 cloves garlic, grated
- 1/4 teaspoon salt
- avocado oil spray
Instructions
- Preheat the oven to 400 F, and add a baking sheet sprayed with avocado oil to heat.
- Meanwhile, in a bowl toss peppers, garlic, balsamic, and salt.
- With an oven mitt, remove the baking sheet from the oven and add the peppers, spreading them out so they're not touching. Spray with avocado oil and roast until softening, blistered and browned (about 15 minutes). Turn on the broiler for a few minutes to speed the process if necessary.
