Roasted Veggie Omelet

ingredients

  • 4 egg whites
  • dash of salt & freshly ground pepper
  • Avocado oil spray
  • 1 serving Summer Roast (link) (or any roasted veggies you like)

Instructions

  1. Heat an 8" pan with avocado oil spray.
  2. Add egg whites and sprinkle with salt and pepper.
  3. Allow edges to brown and flip the egg white top cook the other side.
  4. Meanwhile, heat one serving of roasted veggies in the microwave.
  5. When egg white is fully cooked, slide it onto a plate, place warm veggies on one side, and fold it over.
