Roasted Veggie Omelet
ingredients
- 4 egg whites
- dash of salt & freshly ground pepper
- Avocado oil spray
- 1 serving Summer Roast (link) (or any roasted veggies you like)
Instructions
- Heat an 8" pan with avocado oil spray.
- Add egg whites and sprinkle with salt and pepper.
- Allow edges to brown and flip the egg white top cook the other side.
- Meanwhile, heat one serving of roasted veggies in the microwave.
- When egg white is fully cooked, slide it onto a plate, place warm veggies on one side, and fold it over.
