ingredients

  • Avocado spray
  • 6 large eggs
  • 6 large egg whites
  • 1/2 teaspoon salt
  • freshly ground pepper
  • 1 recipe frittata filling (recipes in the notes)

Instructions

  1. Adjust oven rack to lower-middle position and heat oven to 350 F. Generously spray 12-cup nonstick muffin tin with avocado spray. Whisk eggs, pepper, and salt together in a large bowl.
  2. Prepare filling and divide filling evenly among muffin cups.
  3. Using ladle or measuring cup, evenly distribute egg mixture over filling in muffin cups. Bake until frittatas are lightly puffed and just set in centers, about 9 to 11 minutes. Transfer muffin tin to wire rack and let frittatas cool for 10 minutes. Run knife around edges of frittatas, if necessary, to loosen from muffin tin.
  4. Serve immediately or cover and save in the refrigerator for up to 5 days. To reheat frittatas, bake in a 350 F oven for 10 minutes.

Possible combinations of fillings: all vegetables sauteed and chopped:

  • ½ cup mushrooms, ½ cup spinach, and ¼ cup onion. Add ¼ cup feta (optional).
  • ½ cup roasted red pepper, ½ cup arugula, and ¼ cup onion. Add ¼ cup Parmesan (optional).
  • ½ cup artichoke hearts, 1 yellow tomato, and ¼ cup onion. Add ¼ cup gruyere (optional).
  • ½ cup tomatoes, ½ cup spinach, ¼ cup onion. Add ¼ cup mozzarella (optional).
