Herby Grilled Chicken

ingredients

  • 1 pound chicken breast, cut into chunks (or left whole)
  • 1/4 cup lemon juice
  • 2 garlic cloves, grated
  • 1/4 teaspoon salt
  • 2 teaspoons olive oil
  • 4 tablespoons of freshly chopped herbs (any combination of: parsley, chives, basil, dill, tarragon, cilantro - whatever you like)
  • avocado oil spray

Instructions

  1. in a bowl, combine lemon juice, garlic, salt, olive oil, and herbs.
  2. Place chicken chunks (or whole breasts) in a shallow glass bowl, and add marinade. Massage the chicken so that it's covered with the marinade. Cover the bowl with plastic wrap and refrigerate for 2 hours to overnight.
  3. Heat a grill or grill pan and spray it with olive oil.
  4. Thread the chicken chunks onto skewers (not too close together) and place on the grill (or place whole breasts directly onto the grill).
  5. Cook on both sides for 5-7 minutes, or until completely cooked through and measuring 165 F on a meat thermometer.
