Herby Grilled Chicken
ingredients
- 1 pound chicken breast, cut into chunks (or left whole)
- 1/4 cup lemon juice
- 2 garlic cloves, grated
- 1/4 teaspoon salt
- 2 teaspoons olive oil
- 4 tablespoons of freshly chopped herbs (any combination of: parsley, chives, basil, dill, tarragon, cilantro - whatever you like)
- avocado oil spray
Instructions
- in a bowl, combine lemon juice, garlic, salt, olive oil, and herbs.
- Place chicken chunks (or whole breasts) in a shallow glass bowl, and add marinade. Massage the chicken so that it's covered with the marinade. Cover the bowl with plastic wrap and refrigerate for 2 hours to overnight.
- Heat a grill or grill pan and spray it with olive oil.
- Thread the chicken chunks onto skewers (not too close together) and place on the grill (or place whole breasts directly onto the grill).
- Cook on both sides for 5-7 minutes, or until completely cooked through and measuring 165 F on a meat thermometer.
