Tuscan Chicken Salad

ingredients

  • 1 full batch Herby Grilled Chicken (link)
  • 1 pint cherry tomatoes
  • 1 pound asparagus, ends trimmed and cut into 2" pieces
  • 1 small red onion, peeled and cut into wedges
  • Avocado oil spray
  • 1/4 teaspoon salt
  • 4 ounces baby spinach
  • 4 servings Lemon Vinaigrette (link)

Instructions

  1. Prepare Herby Grilled Chicken according to instructions and let cool.
  2. Meanwhile, preheat oven to 400 F
  3. On a baking sheet lined with parchment, add tomatoes, asparagus, and onion. Spray with avocado oil, sprinkle with salt, and roast for 12-15 minutes, or until the veggies are getting soft and browned. Remove and let cool.
  4. In a large bowl, add spinach, roasted veggies, chicken, and Lemon Vinaigrette. Toss to combine.
