Instructions
- Prepare Herby Grilled Chicken according to instructions and let cool.
- Meanwhile, preheat oven to 400 F
- On a baking sheet lined with parchment, add tomatoes, asparagus, and onion. Spray with avocado oil, sprinkle with salt, and roast for 12-15 minutes, or until the veggies are getting soft and browned. Remove and let cool.
- In a large bowl, add spinach, roasted veggies, chicken, and Lemon Vinaigrette. Toss to combine.
