ingredients

  • 1/2 pound brussels sprouts, trimmed and halved if small, quartered if large
  • 1 small head cauliflower, trimmed, cored, and cut into 1-inch florets
  • 1/2 pound broccoli, trimmed and cut into 1 inch pieces
  • 1 yellow onion, peeled and cut into thin wedges
  • Avocado oil spray
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400 F.
  2. Place all ingredients on 1-2 parchment-lined baking sheets, spray with avocado oil and sprinkle with salt. Roast for 30 minutes, stirring at least once while cooking.
  3. Serve with a drizzle of olive oil.
