White Bean, Tuna & Arugula Salad

  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can tuna, no added salt, packed in water, drained
  • 1 can white beans, drained and rinsed
  • ¼ cup thinly sliced red onion
  • 3 cups firmly packed baby arugula

Instructions

  1. Combine oil, lemon zest, lemon juice, mustard, salt, and pepper in a large bowl, stirring with a whisk. Add tuna, beans and onion; toss well to coat. Add arugula; toss gently to combine.
