White Bean & Thyme Hummus

White Bean & Thyme Hummus

ingredients

  • Olive oil spray
  • 1 small yellow onion, chopped
  • 2 large cloves garlic, chopped
  • 15 oz cannellini beans, drained and rinsed
  • 3 sprigs fresh thyme, leaves chopped (or 1/4 teaspoon dried)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons vegetable broth (to thin if needed)
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. In a large pan, heat to medium a generous olive oil spray and cook garlic for one minute (do not allow to brown), then add onion and cook until softening (but not brown), add a little water or vegetable broth to prevent browning if necessary.
  2. Add beans, thyme, and 1/4 teaspoon salt. Stir to combine well. Allow to cool.
  3. Add mixture to a food processor or high-speed blender. While it's processing pour in olive oil, and vegetable broth if necessary to thin. Adjust salt.
  4. Scoop out of processor and refrigerate for 2 hours or more to allow better texture and melding of flavors.
