  • 1 cup almond milk
  • 4 tablespoons chia seeds
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a jar with a lid, combine the almond milk, chia seeds, maple syrup, and vanilla. Cover and shake to combine. Chill for a few hours, then stir to smooth. Continue chilling for 8+ hours for the pudding to set completely.
  2. For variations, before the setting stage, stir in: 1 tablespoon cacao powder, 1/4 cup melted dark chocolate, 2 tablespoons almond butter, 1/2 cup pumpkin puree (subtract 1/2 cup milk), 1/2 cup fruit puree (subtract 1/2 cup milk), or whatever flavors you like.   3. Top with fruit, nuts, seeds, coconut flakes, cocoa nibs, or whatever you like. Just account for the calories and macronutrients.
