ingredients

  • 1 whole egg
  • 2 additional egg whites
  • 1 tablespoon almond milk (or milk of choice)
  • Pinch salt
  • Freshly ground black pepper

Instructions

  1. In a skillet, heat oil.
  2. Whisk eggs, milk, salt, and pepper. Here you can add chopped herbs if you like.
  3. If you're using a vegetable filling, saute your chosen vegetables now until just softened (onion, mushrooms, tomatoes, zucchini, peppers, greens all work well). When they're cooked, remove them from the pan and add the eggs.
  4. Cook the eggs on one side until just golden, flip and cook through. Flip again and add stuffing if using. Fold the omelet and press down gently.
  5. If you're not using stuffing, you can skip the flip, and simply fold when the first side side is golden.
  6. Garnish with more veggies, cheese, or herbs if desired.
