ingredients

  • 4 ounces smoked salmon
  • 1 cup cooked white or brown rice
  • 1 cup frozen shelled edamame, thawed and rinsed
  • 2 Persian cucumbers, sliced thin
  • 1 large carrot, peeled and sliced thin
  • ½ cup daikon radish, peeled and sliced thin
  • 1 avocado, peeled and sliced
  • 2 tablespoons pickled pink ginger
  • 2 tablespoons pickled red onions
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon sesame seeds

Instructions

  1. Divide ingredients evenly between 2 bowls.
  2. In a small bowl, whisk the vinegar and soy sauce and drizzle over bowls. Sprinkle evenly with sesame seeds.
