ingredients

  • 6 large eggs, hardboiled and halved
  • 1 ripe avocado, peeled, pitted, and cubed
  • 1 lemon or lime, juiced
  • 2 tablespoons red onion, finely chopped
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Instructions

  1. In a bowl, combine egg yolks, avocado, citrus juice, garlic powder, and mustard. Whisk to combine thoroughly. Add a bit of olive oil or water to thin if needed. Season with salt and pepper to taste.
  2. Fill the egg halves with the avocado mixture. Refrigerate & enjoy.
