Chocolate Chia Pudding

ingredients

  • 1 (16-oz) block silken tofu
  • 1 tablespoon cacao powder
  • 1/2 cup chia seeds
  • 4 teaspoons maple syrup

Instructions

  1. In a jar with a lid, combine the almond milk, chia seeds, maple syrup, and vanilla. Cover and shake to combine. Chill for a few hours, then stir to smooth. Continue chilling for 8+ hours for the pudding to set completely.
  2. For variations, before the setting stage, stir in: 1 tablespoon cacao powder, 1/4 cup melted dark chocolate, 2 tablespoons almond butter, 1/2 cup pumpkin puree (subtract 1/2 cup milk), 1/2 cup fruit puree (subtract 1/2 cup milk), or whatever flavors you like. Just account for the calories and macronutrients.
  3. Top with fruit, nuts, seeds, coconut flakes, cocoa nibs, or whatever you like. Just account for the calories and macronutrients.
