ingredients

  • 2 Persian cucumbers, grated
  • 1 cup plain non-fat Greek yogurt (or Greek-style yogurt of choice)
  • 1 tablespoon finely chopped fresh dill
  • 2 garlic cloves, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt

Instructions

  1. Place the grated cucumber in a fine-mesh sieve over a bowl and press down on it to drain out excess water. Alternatively, place the cucumber in a nut milk bag or cheesecloth and gently squeeze all the moisture out. Transfer to a medium bowl.
  2. Add yogurt, dill, garlic, oil, lemon juice, and salt to the bowl and stir until creamy.
