Spicy Broccoli Chicken & Stars

ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 pound broccoli or broccoli rabe, rinsed and chopped
  • 1 package Brodo Tuscan Sun (Rosemary-Lemon) bone broth + 3 cups water, or 4 cups of any bone broth you like
  • 4 ounces Jovial gluten-free Stelline pasta, or any pasta you like
  • 1 pound chicken breast, cooked however you'd like (poached, air fried, sautéed, roasted), and shredded - this is great with leftover Lemon-Garlic Chicken
  • 1/4 teaspoon salt
  • 1/2 teaspoon crushed red pepper

Instructions

  1. In a large pot, heat olive oil. Add garlic and cook for one minute.
  2. Add broth, or broth + water and bring to a boil
  3. Add pasta and cook according to package instructions.
  4. With 3 minutes left on cooking the pasta, reduce to a simmer and add the broccoli / rabe, salt, and crushed red pepper. Simmer 3 minutes.
  5. Divide among 4 bowls and serve.
