Snap Pea, Radish, and Cabbage Salad

ingredients

  • 4 oz sugar snap peas, thinly sliced crosswise
  • 8 medium-sized radishes, tops trimmed
  • 4 oz of red cabbage, finely shredded
  • 4 oz of fresh or frozen baby peas, thawed
  • 1 large lemon, zested and juiced
  • ¼ cup of extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • Sea salt to taste
  • Freshly ground pepper to taste

Instructions

  1. Combine snap peas, radishes, cabbage, and peas in a medium bowl.
  2. Add remaining ingredients to a jar with a lid. Shake to mix well.
  3. Toss salad with dressing just before serving.
