Salmon Tacos with Cucumber-Cabbage Slaw

ingredients

  • 1 pound salmon, skinned & cubed
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin or coriander
  • 1/4 teaspoon salt
  • Avocado oil spray
  • 4 Persian cucumbers, sliced thin
  • 2 c green cabbage, shredded
  • 1/2 c red onion, sliced thin
  • 1/2 bunch cilantro, chopped
  • 2 medium jalapeno peppers, sliced thin
  • 1/4 cup fresh lime juice
  • 1/4 teaspoon salt
  • 8 store-bought whole wheat 6" tortillas
  • 1 c fresh, store-bought fresh guacamole

Instructions

For the salmon & slaw
  1. Preheat an air fryer to 350F, place salmon on a piece of parchment paper and season with lime juice, salt, and avocado oil spray. Roast for 15 minutes or until cooked through. Alternatively heat a large pan on the stove, spray with oil, and cook salmon on medium heat until browned on all sides.
  2. Meanwhile, prepare the vegetables and toss in a bowl with lime juice and salt.
  3. Make Perfect Guacamole
  4. Divide salmon, slaw, and guacamole evenly among 8 tortillas & serve.
