- 1 pound yellow flesh potatoes, halved
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 teaspoon ground oregano
Instructions
- Preheat the oven to 385 F
- In a large high-sided pan, toss potatoes, oil, salt, and oregano (crumble it in between your fingers to release the oils)
- Roast cut side down for 35-40 minutes or until browned and cooked through
