  • 1 pound yellow flesh potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon ground oregano

Instructions

  1. Preheat the oven to 385 F
  2. In a large high-sided pan, toss potatoes, oil, salt, and oregano (crumble it in between your fingers to release the oils)
  3. Roast cut side down for 35-40 minutes or until browned and cooked through
