Herby Shrimp Salad

ingredients

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 pound large shrimp, peeled and deveined (or crab meat)
  • 1 large avocado, cubed
  • ½ cup chopped celery
  • 2 tablespoons red onion, chopped
  • 1 Fresno pepper, chopped (optional)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Bring a large pot of water to a boil and add the shrimp to cook for 2 to 3 minutes, until just opaque and cooked through. Don't overcook or they will become rubbery. Transfer to an ice bath to stop the shrimp from cooking.
  2. Chop the shrimp and transfer to a medium bowl. Add the lemon juice, olive oil, celery, pepper, onion, dill, chives, and salt. Combine well.
  3. Chill in the refrigerator until ready to eat.
